Bad Walter's Bootleg Ice Cream in Rockridge released a new lactose-free flavor called Rize and Shine, made with brown butter sourdough ice cream and blended with roasted strawberry jam and candied bread crumbs.

Owner Sydney Arkin said the shop, which employs 13 workers, creates one or two creative flavors each week—showcasing a careful blend of art and science in its process.
